Stuffed Peppers

Serves 4


Step 1

Dice the chicken breasts, onion and courgette. Half the peppers and remove the stalks and seeds

Step 2

Season the chicken with 1/2tsp salt, 1/2tsp pepper, 1tsp garlic powder and 1tsp smoked paprika, add olive oil and mix

Step 3

Add the onion and courgette to a hot pan and add the same seasonings as in the last step

Step 4

Cook for 5 minutes before removing from the pan and setting aside

Step 5

Add the chicken to the same pan and cook for 5 minutes until golden brown

Step 6

Add the onion and courgette back to the pan and mix

Step 7

Place the halved peppers on a lined baking tray and fill them with the chicken and vegetables

Step 8

Bake for 15 minutes and then top with jalapeños and low-fat cheese

Step 9

Place back in the oven for a further 5 minutes, serve and enjoy
