Delicious and light, perfect for summer!
Ingredients
Serves 1
125g cooked black quinoa
40g greens
1/2 baby cucumber
1/4 avocado
1/2 peach
1 vegan chicken burger
1tbsp tahini
2tsp Dijon mustard
1/2 lemon
1/2tbsp agave
Salt
Pepper
Hemp seeds
Method
Step 1
To make the dressing combine tahini, mustard, lemon juice, agave, salt and pepper to taste
Step 2
To a bowl add chopped cucumber, chopped avocado, quinoa, dressing and greens. Thinly slice the peach
Step 3
Cook the burger and then slice into bite sized pieces. Add it to the salad bowl along with the peach slices. Top with hemp seeds and enjoy
