To start, cut your rack of ribs into single rib pieces. Prepare a large pot with water and begin to boil, add ribs. Pour in the cooking wine and ginger, cook and bring to a boil. Boil for five minutes, use a ladle to skim away foam and discard it.
In a wok, add sugar and sunflower oil. Cook on a medium-low heat, stir to dissolve the sugar. When the sugar turns yellow, immediately add the ribs, take extra care with this step as you are dealing with extremely hot temperatures. Stir to coat them well in the sugar, turning over once coated to get the other side.
Turn the heat back up to medium-high and pour over the vinegar and soy sauce, stir constantly as the sauce is heating and thickening. When the ribs are coated, immediately transfer to a plate. Garnish with chopped spring onion and sesame seeds and enjoy!
