Preheat your oven to 190ºC. Dice the sweet potato to around 2cm cubes

Oil an oven proof dish, then add the sweet potato, more olive oil, smoked paprika and sea salt. Bake for 12 minutes

Whilst that’s in the oven, peel and finely slice the onion and garlic and dice the pepper to around 1cm cubes. Slice the chorizo

Add a little more oil to the sweet potato if needed and add the chopped vegetables and chorizo to the sweet potato and mix them in

Place back in the oven for a further 12-15 minutes. Heat oil in a pan and fry the duck egg. Once the chorizo hash is cooled, top with spinach, the egg, salt and pea shoots, serve and enjoy!
