These sweet potato fries are a MUST if you're having burgers, they're so good you'll do an Ara and eat them off the floor
Ingredients
Serves 1
1 sweet potato per person
1 sprig fresh rosemary
1tbsp smoked sea salt
1tbsp smoked paprika
Frying oil
Parsley for garnish (optional)
Method
Step 1
Clean the sweet potatoes
Step 2
Cut the sweet potatoes into chip shapes, rinse and soak in cold water for 15 minutes
Step 3
Drain the chips and pat completely dry
Step 4
Put a pan of vegetable oil on a medium heat until it’s around 130ºC or it sizzles when you dip a chopstick in
Step 5
Fry the chips for about 10 minutes or until you can poke them easily with a knife and transfer onto a drying rack
Step 6
Let the chips rest and turn the heat up until the oil is about 180ºC and fry for another couple of minutes until they’re crispy
Step 7
Finely chop the rosemary and combine with smoked paprika and smoked sea salt in a pestle and mortar
Step 8
Toss the chips in the seasoning, garnish with parsley (optional), serve and enjoy!
