Sweet Potato Gnocchi

Serves 4


Step 1

Preheat the oven to 400ºF/200ºC Poke a few holes in the sweet potatoes with a fork, and then bake them for 40-50 minutes or until tender, then leave to cool. Place the flour mixed with 2tsp salt on a worksurface and make a well in the middle. Peel and mash the sweet potato and place into the well

Step 2

Knead until you have a nice, dry dough. If too sticky, add extra flour and keep adding until the consistency is right, then roll into a ball

Step 3

Flour a surface and cut the ball into 4 even pieces. Roll each piece into a long log that’s about ½ inch thick. Cut the gnocchi into 1-inch pieces. Gently tap the cut ends of each piece into flour to ensure that it’s dry and not sticky at any edges. Continue until you’ve cut out pieces from all of the dough, then roll them over a fork to make grooves

Step 4

Press or mince the garlic. Melt butter in a large skillet and add the garlic. Stir, then add the sage, salt and pepper

Step 5

Add a pinch of salt into a pan of water and bring to a boil. Add in the gnocchi and let cook for a couple minutes. Once the gnocchi floats to the surface of the water, let it boil for 30 more seconds and then remove it from the water using a slotted spoon

Step 6

Toss the gnocchi through the butter sauce, serve and enjoy!
