Method

Step 1

Microwave the sweet potatoes for 6-10 minutes until soft. Peel, place in a bowl and mash before adding egg whites, vanilla extract, salt and cinnamon and then mix until smooth. Add protein powder and mix until you have a really smooth consistency

Step 2

Add oil to a hot pan before adding some pancake mix. Flip after 2 minutes and, when golden brown, stack and serve with maple syrup
