Super quick and easy, great for a quick lunch served alongside salmon!

Step 1
Start by roughly chopping your cucumber, tomatoes, romano pepper, red onion and herbs and add them into a large mixing bowl
Step 2
Now pour your couscous into a separate bowl, crumble on some vegetable stock and pour over enough boiling water to just cover the couscous. Add a plate or clingfilm to the top of the bowl and leave for 5-10 minutes to cook. Once cooked fluff with a fork
Step 3
Squeeze the lemon juice over the salad, drizzle over some olive oil then add in the couscous to the vegetables. Combine and serve with salmon!
