Rub oil into the shank. Season with salt and pepper
In a bowl combine curry powder and tandoori seasoning. Rub the seasoning into the lamb shank. Rub the half the garlic, ginger and 1 chilli into the lamb shank.
Sear the lamb shank in a pan with 1/2 an onion, cardamom, curry leaves and 1 chilli
Slice the tomatoes in half and place in a roasting dish along with 1/2 an onion and the lemon. Place the shank on top and submerge a quarter in water. Wrap the tray tightly with foil. Bake at 120C for 2hr 30. Then remove the foil and bake for 20 minutes at 180C. Enjoy!
