Method

Step 1

Finely chop the shallot, then peel and chop the sweet potato into small cubes

Step 2

Heat oil in a large pot, then add the sweet potato and season with salt and pepper, then add the shallot

Step 3

Once the shallot has softened slightly, add butter and press in the garlic

Step 4

Add the coconut milk and stir well, then add the curry paste, lentils and spinach. Cook until the lentils have softened and the soup is thick, then serve and enjoy!
