Thai Red Curry Vegetable Soup

Using ingredients you may already have in, this soup is comforting and warming.


Serves 3


Step 1
Start by chopping up all of your veggies. Finely dice everything, setting aside your cabbage and spinach for later
Step 2
Sauté your carrots, celery and onion on a medium-low heat until soft.
Step 3
To the veggies, add your thai red curry paste followed by chicken stock or broth
Step 4
Peel your potatoes and chop them into quarters or halves. Place them into the pot along with the cabbage, season with salt and pepper, cover and bring to a simmer. Leave covered for twenty minutes
Step 5
Uncover, stir and add your spinach in. Leave for an hour. Then, use a handheld blender to blend your soup mix together to create a smoother consistency
Step 6
Stir in a can of coconut milk, add some more salt and pepper and serve with crutons!
