Super quick tomato tofu sandwich, the perfect vegan snack or speedy lunch this summer!

Method

Step 1
Start by slicing your tofu and adding the pieces to a mixing bowl. Season with turmeric, garlic powder, tarragon and mix together to ensure the tofu is well coated
Step 2
Move to a baking tray then place into the oven at 180 degrees Celsius for 5 minutes
Step 3
Then place a pan over a medium heat. Add the tofu and fry for 4 minutes on each side until browned
Step 4
Slice open your bread and drizzle over your olive oil over the insides. Place into the oven or under the grill for 5 minutes
Step 5
Add your chopped tomatoes to the pan with the tofu and simmer until the sauce reduces
Step 6
Now construct your sandwich. On one slice, add a handful of rocket and on the other spread on a generous amount of hummus. Add in the tofu and tomato mixture and enjoy!
