Tomato and Goats Cheese Dip

Step 1
Preheat oven to 200 degrees Celsius. Slice the tomatoes if using big one or halve them if using cherry tomatoes. Chop chili pepper and cut off the top of the garlic clove
Step 2
Splash 1tbsp olive oil over the bottom of the ovenproof dish. Place in your tomatoes, drop your chilli in the middle and spread your garlic on the edge. Place your cottage cheese in the middle and then sprinkle with salt, a mix of peppers and oregano. Finally, drizzle with another tbsp of olive oil and add thyme sprigs. Bake for 35 minutes
Step 3
Meanwhile prepare the bread. Slice baguette, transfer to the baking tray and drizzle with remaining olive oil. Bake for 10-15minutes or until golden brown
Step 4
When tomatoes are ready, squeeze the garlic and discard the thyme. Add sliced olives and mix all together. Garnish with thyme leaves and serve with toast bread
