Method

Step 1

Start by broiling the eggplants for 5 minutes. Once the skin has charred, place them in a bowl and cover for 5 minutes

Step 2

Crack the eggs open and mix together with the fish sauce. Peel the eggplants but leave the tip, mash them flat with a fork

Step 3

Dip the eggplants in the eggs and cook in an oiled pan on medium heat (adding some egg on top)

Step 4

Salt lightly and serve with cucumber, tomato and red onion roughly chopped and top with chives (you can also serve it with rice or eat it on its own)
