Start by frying your ham with the olive oil and fresh thyme. Then, chop up your leeks and add them to the pan with the ham. Season with salt and pepper to taste and cover with a lid and let cook for thirty minutes.
After thirty minutes, add the cooked turkey or chicken to the mixture and combine well. Then go in with flour and combine by stirring well.
Once combined add in your chicken stock, cream and stir. Let sit and simmer for a five minutes before sieving the mixture separating stock from mix. Save your stock in a bowl for later.
Spoon your pie mix into an pie dish and prepare your pre-made puff pastry as directed by the packet. Roll over, score and top with an egg wash. Pop in the oven for thirty minutes at 180F and enjoy!
