Step 1
Wash and peel strips of aubergine skin to create a stripy pattern. Slice the aubergines and drizzle with oil

Place sliced aubergine into an airfryer and cook for 10 minutes at 185C. Once cooked place on a paper towel
Step 3
Chop onions. In a frying pan add sunflower oil and onions, and cook till onions soften. Add beef mince and cook till brown. Add chopped garlic, salt, pepper, oregano, a can of tomatoes, 2tbsp tomato puree and 150ml hot water. Simmer for 20 minutes
Step 4
Add chilli flakes and parsley to the beef

Chop bell peppers and tomatoes. In an ovenproof dish make two layers of aubergines and beef. Top with bell peppers and tomatoes. Before baking mix together 1/2tbsp of tomato puree with 150ml water and pour over aubergines. Bake for 20 minutes at gas mark 6
