Vegan Banana Pancakes
“Lazy Sunday morning? Try out these vegan banana pancakes finished with coconut yogurt, maple syrup and lemon zest!”

Step 1

Into a mixing bowl, add your dry ingredients; flour, baking powder, sugar, and salt

Step 2

Next, whilst continuously staring the mixture with a whisk add in your oat milk followed by apple cider vinegar and vanilla extract. Continue to stir until all the lumps have disappeared

Step 3

Grab a chopping board and banana and chop it in to slices

Step 4

Place a pan over a medium heat and heat up a tbsp of olive oil. Once the pan is hot ladle in the mix. Place three banana slices onto topside of the pancake. After a minute, peek under the pancake to check its golden brown, then flip for another minute until, again, it’s golden brown

Step 5

Once you used all the pancake mixture, finish the stack off with coconut yogurt, a drizzle of maple syrup and a grating of lemon zest. Enjoy!
