Method

Step 1

In a mixing bowl, mix together sugar, coconut milk, agar agar and soya milk. Mix well with a whisk

Step 2

Pour into a saucepan and bring to the boil, then simmer whisking gently for two minutes

Step 3

Place your desiccated coconut onto a baking tray and bake until golden brown, around ten to fifteen minutes at 180C.

Step 4

Pour your simmered down mixture into two ramekins or glasses. Simply put into the fridge for an hour in order to set. After a few hours, garnish with your coconut flakes and sorbet if you have it. Enjoy!
