Method

Step 1
In a sauce pan mix together lemon juice, water, cornflour and sugar ensuring there are no lumps. You can add food colouring if you wish. Keep stirring it on a gentle heat until it thickens
Step 2
Scrape the mixture into a bowl and add cubed, cold butter. Mix it together until the heat f the lemon has melted the butter. Place in the fridge to thicken and firm up
