Preheat your oven to 350ºF/180ºC, then whisk together flour, salt, baking soda, ginger and cinnamon

Whisk the dry ingredients, then melt the butter and add to a separate bowl along with ½ cup/100g sugar. Beat in a stand mixer for 1 minute or until the sugar has dissolved

Add molasses and vanilla and mix until well incorporated

Gradually fold in the flour mixture with a rubber spatula until the dough is thick and sticky

Spoon out around 1tbsp of the dough at a time and roll into a ball, then roll in the remaining sugar. Place each ball on a lined baking tray, bake for 10-12 minutes, serve and enjoy!
