Vegan Gluten Free Sponge

Serves 8


Step 1

In a bowl add self raising flour, sugar and salt. Beat in the softened butter until it forms a bread crumb-like consistency

Step 2

In a separate bowl combine chickpea water, vanilla and white wine vinegar. Add in three goes to the flour mixture, beating the mixture each time. Beat for a further 15 seconds until its fluffy and pale

Step 3

Divide the mixture between two lined 7" cake tins, gently spreading it to the edges. Bake in a preheated oven for 22 minutes at 160C. Once baked, leave in tins for 5 minutes to cool, then flip out onto a cooling rack. Layer with filling of your choice - you can combine icing sugar and lemon juice to make a drizzle
