Method

Step 1

Soak the cashews in water for 2 hours, then rinse and drain. Remove the stems from the cilantro and the seeds and membrane from the jalapeño and coarsely chop

Step 2

Place the cashews in a blender along with cilantro, jalapeño, lime juice, apple cider vinegar, garlic and salt and blend until smooth.
