Preheat oven to highest temperature (240Β°C). To a food processor, add the onion, parsley, and bell pepper. Pulse until finely chopped and transfer to a large bowl. Add the plant mince, tomato paste, olive oil and seasoning mixture to the bowl and mix well. Cut the dough into 4 pieces. Flour your work surface and roll each piece of dough into a circle as thin as possible, then transfer onto a lined baking tray

Spread a few tablespoons of the mince mixture evenly on top of the base, leaving a clean margin around the edge about 1 cm wide. Bake in the oven for about 8-10 minutes or until the edges of the dough are nicely golden-brown. Cut each Lahmacun into four portions and squeeze some lemon juice on top. Serve with vegan yoghurt and fresh parsley leaves
