This delicious Indian spinach dish is great with cheese, but did you know that you can make it plant based with tofu instead? It's perfectly spiced and brilliant with fresh, fluffy rice


Serves 4


Step 1
Add the onion, garlic, ginger and chilli to a food processor to chop until fine
Step 2
Toast the cumin and coriander seeds in a dry frying pan, then grind to a fine powder
Step 3
Heat olive oil in a large pan, then cook the onion mix to soften. Add salt, the cumin and coriander powder, and all of the spinach and cook until most of the water has gone
Step 4
Add garam masala, wild garlic and lemon juice, then blitz with a hand blender
Step 5
Cut the tofu into cubes and fry with turmeric and salt until golden brown. Serve the saag topped with the chickpea tofu and enjoy!
